Miles Cooks A Masterpiece
This post is long overdue:
Shane invited Nat and I to dinner at his friend Miles house. Miles works at Animal and Son Of A Gun, and in his off time likes to cook four course meals for his coworkers’s. I was very excited to be a part of this meal. I’ve never had a four course meal from an aspiring chef who was testing out his skills for an audience of super tough critics aka friends. These dudes all work in a very fast paced and hectic environment, so it was fun to hang out with them in much more relaxed circumstances. I hope to do it again one day. Here is a breakdown of the dishes in the order they appear above.
Hiramasa, Tiradito, Ikura, (sounds like three Japanese guys) Strawberry, Dashi (the fourth Japanese guy), and Yam.
Octopus and Chorizo Marmalade, Pan Torta, and Pimenton
Lamb Belly Sake Kasu, Galia Melon Kimchi, Sour Onion Ring, Honey Comb, and Cherry Juice.
Chocolate Fudge, Sherry Vinegar Whipped Cream, Black Pepper Butterscotch, and Berries.
